We have it quit often....I adore both duck and lamb. We have it quit often.<br />One year for Christmas dinner we had duck breast and it was fabulous. Son is a fabulous cook. And yes duck fat is a treat.<br />Love anything with lamb. In fact I grew up eating lamb, especially at Easter. <br />My Mum was an adventurous cook and we ate everything. Dinners at our house was fun. And all on a budget.<br />I don't care for cinnamon so I would not put cinnamon on any meats. Lots of duck here also, we have it during Thanksgiving, Christmas,etc. A lot of times on the grill. It's good, but not sure how cinnamon is with either of them. So yeah, we have duck fairly often. I like it. Here in Korea, it's usually stewed with sweet and spicy sauce, or stir-fried with salt, pepper and veggies. Peking Duck, which Ian mentions above (plum sauce, cucumber, wrapped in a pancake) is really good, too.<br /><br />Mutton is the sort of meat some people don't like because of its fragrance, but lamb tends to not be so pungent. I'm fond of lamb or mutton curries, myself. When I was a kid, my uncle would have a family/company gathering once a year and roast a lamb. So obviously, you can see I like it. Duck is pretty fatty but very good, wild duck and farm-raised duck are very different in taste and wild duck must be cooked more carefully as it is much leaner than are farm ducks.<br />Lamb is something I eat as often as my budget allows. Stay away from those ridiculously overpriced loollipop chops they are they are pretty bland cuts. Note: lamb and mutton (older sheep) have very different tastes with mutton being stronger and gamey compared to borring old beef. There plenty of lamb in the markets near me i can usually find groun lamb, a variety off chops, leg of lamb and stewing lamb.
