My First Vanilla Cupcake

It was super hard yesterday not to publish a second post so quickly after my first one.  But I'm trying to reach 204 days of blogging in a row, and I didn't want to blow my wad, and not have a post for today.

So now it's today.  Check it out.  I used my own vanilla pizzelle formula, added leavening agents and bam, mini vanilla cupcakes, using my Babycakes machine.

I've never made vanilla cupcakes before.  I'm not a big cake eater so I wasn't sure if this trick would work, but I'm happy to report it needs a few adjustments, but I'm in the right direction.  I tell ya', I love the creativity of baking.

Love it.  Love it.  Love it.

  1. I would eat that! Looks really great. So happy with all the fun you are having with your machine. I need to check out garage sales this weekend I think!

    1. Like I say to Dezzy, if you lived closer, I'd loan you this machine. It's really fun. And cleanup, forget about it. It's a snap.

Last weekend I made chocolate chip spiced muffins, and I thought Jen B would like these. Wish I could drop them at her house.

    1. Not as expensive as buying minis to paint but I tell ya, it's not all that cheap either, being a little baker.

  3. I usually like to experiment with jam muffins = eggless and without baking powder.

    1. PS aren't those in your pics muffins, and not cupcakes? I thought it's a cupcake only when you put some topping or icing up on a muffin :)

    2. Lekvár muffins and cupcakes are coming up. Gotta do that, I'd be a bad Hungarian if I didn't.

    3. There's a lot of talk cupcake vs. muffin. That might make for a fun post. Maybe even a Friday Question for tomorrow.

For me, a cupcake is sweeter and more airy, and can be eaten with or without frosting. Though these vanilla cupcakes, had chocolate frosting which sadly, just never made it into the shot.

I wish you could try this machine, Dezzy. If we lived closer, I'd let you barrow it. Cooks them so fast and the clean up is a snap. Well worth the five dollars for this new toy.

    4. That would've been lovely.
I use silicone muffin pan, I have a few of them, never use metal ones. Silicone ones are easy to clean, nothing sticks to them. And in my lil' oven muffins are done in about 10 to 15 mins. I also use silicone ice cube moulds to make little chocolate pralines for cake decoration :)

    5. I would love if we could sit down and eat together. You have so many wonderful ideas, I'd love to taste them all.

I've always been afraid of silicone muffin molds. I have them for ice cubes. I'll have to try them in the oven. I like the idea that they are easy to clean.

And hey, I'm writing up tomorrow's Friday Question: Cupcakes vs. Muffins. Thanks for the idea. I'm adding your link to the post now.

    6. but don't use the ice cube moulds for baking :) not sure if all silicone can take the heat. Mine can go up to 250*C. They're the present and future of baking - so easy to use, to wash, nothing ever sticks to them, you just pop everything out.... I'd love to buy a regular rectangular silicon pan too for baking whole cake sheets and for baking sponges for my savoury rolls. Those usually stick either to the paper or to the regular pan. Sometimes I use them upside down to bake cheese baskets with grated cheese

    7. The skull ones I got were from the dollar store and I don't know if they were for baking or ice, but maybe just ice.

I have a sil flat pad that I use on my baking sheet for breads and rolls. It's nice. With coupon we got two big sheets for three dollars.

I've seen the sil cupcake molds but they've always scared me. I don't know why. Although, some of them that I have smelled, are stinky.

Just put a chocolate creation in the Babycakes machine. Smells nice so far. Not sure if it will work, but that's the fun.

PS: I never made it to watch the rest of THE NANNY.

    8. I recommend using the seethrough silicone ones, not the ones that look like black rubber because I've seen those on foreign telly and it looked like bicycle tyre :) Mine are seethrough blue and they have no smell whatsoever

    9. We have pink, red and all kinds here. Never saw the black yet. I like that yours has no smell. That's what I always do, smell my bakeware, lids, pans, anything I use like that, I smell before buying.

      Thanks, Dezzy.

    10. it is possible that the smell goes away after you put it in the oven and bake it a bit... I also use silicone brushes and whisks

  6. In New Zealand we call 'bam' oven cleaner. I take it that is not what's in your cakes! :))

    1. Funny how words are different. I think we have bam cleaner. Maybe it's Pow or Zam. I dunno. Some super hero wording.

      How goes you today?

  10. Those look good. I'm so-so on cake. But I recently made a vanilla cake with tie-dye coloring. It was so fun to eat.

    1. I used to make tie-dye cupcakes when I was a babysitter. How fun are they? So fun.

  11. So much fun ! and I think cupcakes don't always have to be frosted. To me a muffin is/could be denser and filled with more nutritious stuff. Just saying.
After I finish my big art commission I will try to make cakes in my takoyaki maker.

    cheers, parsnip

    1. Yes, I agree. And I'm so used to making muffins, that I have to change up my formulas because I want them to be airy and flirty, like a little cake.

Looking forward to hearing about your takoyaki maker, adventures.

    1. Thank you for the kind words. You have my email, so if there is something you want to try, drop me a note.

We had chocolate cream cheese frosting, but it never made the photo shoot.
