Friday Question: Grilled Meats

I know nothing about grilling meats.  In fact, just this past week, was the first time I ever made and ate grilled pork chops, chicken, and hamburg.

I tell you this, I don't know why anyone would go out for a burger when it's so much better on the grill.

Holy cow.  It was good.

However, yesterday's chicken experiment didn't go as well.  I dropped the chicken on the grill and said to Tim, "I don't think the chicken is supposed to be on fire."

And it was.  Big old honkin' flames.

So I tried again with a second test batch and that worked much better, but still a little dry.  Like I said, I know nothing.  Having a been a veghead most of my life, I never gave two hockey pucks, about what people were grilling.

But now I'm interested.  So brings me to Friday's Question.  What's your favorite grilled meat, fish, fruit and/or veg?

  2. We don't do a lot of grilling, but usually it's chicken. Always best on skewers with vegetables. Portabellas also grille well.
And no, the chicken shouldn't be on fire. Bet it was quite a sight though!

      seafood ones. Both very
      good. And now I'm excited
      to try chicken.

  3. My friend can grill these jumbo shrimp with bacon wrapped around them and brushed in BBQ sauce that I love to death! I also like my steaks on a grill.

    1. Jumbo shrimp with bacon does sound good. Never tasted them together. I want to make my own BBQ sauce. That will be fun.

What's your favorite brand of BBQ sauce?

  4. That's a tough one. Probably steak, though.

  5. Just a burger is good enough for me, but my hubby has a fantastic technique for juicy grilled chicken (he always buys the bone-in breasts).

    1. Yummy, yum, yum. Hope he's having fun with his smoker. We saw a grill that had a smoker added, but it was too BIG for our back deck. And our budget.

  6. I do like a grilled steak; it's the best that way - imo.

    1. I don't have a favorite cut of steak yet. I'm still learning what the heck they even are.

  7. Hubby does all the grilling here and that means steak. He doesn't know how to grill anything else. he he he.

So, that makes my favorite: steak!

I commend you for cooking chicken on the grill because that makes me a tad nervous. Kudos!!

    1. I'm afraid I will undercook it and make everyone sick. The first meal I cooked was chicken...it didn't go well...thankfully, I've improved my skills in the kitchen. The grill, not so much. But, I did grill steaks the other day!!! =)

    2. That is understandable. And probably why I overcooked mine. But boy, it it ever fun to play on this new grill.

Glad you got some steaks done.

      So fun :-)

  8. Hmmm...so hard to choose. Well, I'm not much of a red meat eater, so I always prefer chicken or shrimp. Veggies on the grill are always pretty amazing, too!

    1. That's what I forgot to buy when I was at the store last weekend, hot dogs.

Do you have a favorite brand? Mine are Coleman uncured hot dogs. So flipping good.

    2. I would probably eat any hot dog - from all beef to chicken to veggie. Love them.

  10. We have a huge grilling culture here in SA. Most popular is marinated beef in all kinds of sauces and spices... gosh I'm hungry now.

  12. I have a great recipe for you, Ivy. Marinate some pork chops in soy sauce. Prior to grilling add black pepper and garlic salt. Yum!

    1. I would try that, next time I get a coupon for soy sauce. Then I'll send you an email and let you know how it went.

      Thanks.

  13. Marinate your chicken, Whisk. Especially if you're grilling it skinless annd boneless. Wishbone Italian dressing does a fabulous job in a pinch.

And no, there's nothing like grilled foods. Everything tastes better on open flames. As long as they are not flaming themselves.

    1. I used a homemade marinade for both my chicken and my pork. Both very good. But with the chicken, I left the second batch on the grill too long. And the first batch ... well, that kind of burnt, just a bit ...

Do you ever make your own marinades?

  14. I ditto Kris on the ribeye steak. Definitely the best cut of beef left on normal cattle. After years of breeding for less fat, the marbling in most cuts is gone. Ribeye still has some fat and is super tender. Really hard to screw it up. Just put salt and pepper and crushed garlic on them, let them set for a while, and make sure they come to room temperature before they go on the grill.

Also, sea scallops wrapped in pancetta with some rosemary and lemon juice. That kills. Also, pork tenderloin, marinated in oil and vinegar with S&P, sage, thyme, basil, etc. Again it's important to let the meat warm before grilling if it's been in the fridge.

Vegables: zucchini, asparagus, peppers, red onion slices, with a bit of oil on them. If the coals are still going at the end, I throw a whole eggplant or two to bake, and then when it's mushy make baba ganouj the next day.

If it wasn't raining in PA I'd be all over this tonight!

    1. I did this yummy pork this week, homemade marinade and there was that fat line on the edge. Tim kept it on and boy, I have to say, it was good. Though I don't want to eat too much of that, I'm glad I got to taste it.

Scallops I've had on the grill and like them best grilled. I have never had them wrapped in pancetta. I've never eaten pancetta.

I agree on letting the meats come to room temperature before tossing them in a hot skillet or grill.

Hope the rain goes away, still weird here today, was even a little cold at one point and then nice.

      Anyway, thanks for the tips.

  15. Salmon!

Chicken has to be skinless, boneless to not get charred.

  16. Never had good luck grilling chicken on propane, too hot. Chicken is best on low flame and long cooking. I always do halves on charcoal for an hour or so, turn every 5 minutes. It's done when you can twist the leg bone in the drumstick. Marinade for 2 halves:
1 egg beaten, 1/2 cup veg oil, 1/4 cup cider vinegar, 1 tsp salt, 1 tsp poultry seasoning, 1/2 tsp ground black pepper, whisk. Marinate minimum 24 hours, best 2 days. brush marinade left in the dish every time you turn for the first half hour, then stop so you don't risk food poisoning. You have to be careful on propane, turn the burners to low and keep flipping.

    1. It is super duper hot. When I do my onions I keep it low, low, low.

Our old grill was charcoal and I was hoping for that again. But the only ones we found were both and WAY too big for our back deck, and budget.

Thanks for this recipe. This is a fun post. I enjoy reading all these wonderful tips.

  19. I grill an eggplant, onion, zucchini, pepper, some garlic bulbs, and a bunch of tomatoes. Then I puree the whole lot with herbs and freeze in one-cup portions to use as pasta sauce. DELICIOUS.

    1. Garlic bulbs. That is a great idea. And so is your pasta sauce. I do that in the oven, but never thought about doing it all for the grill. Thanks.

  20. We always do our burgers on the grill. I usually precook the chicken a little so it gets done on the grill before it dries out.

    1. That's what I've heard some people do. One mentioned boiling the marylands (leg and thighs connected), for 20 to 30 minutes.

Interesting to hear what different grillers like do to.

  21. Ken's ribs on the grill are fabulous; better than any restaurant. He makes his own rubs and sauces for them, but I don't know if he ever writes them down. He also uses hickory chips to smoke them. Corn on the cob and asparagus are some of my favorite veggies on the grill. Oh, and onions and peppers are fantastic, and so easy, like you said.

    1. I remember he showed me a picture of them online, I believe. And they looked good. At least I think they were ribs.

Onions and peppers. So simple. So amazing.

Hope you guys are having a groovy weekend. I'm home from prep and about ready to dig into a pile of cob corn.

  22. is grilled the same as barbecued in your vocabulary, Ivy? :)
Barbecued is the least healthy way of preparing food since the smoke makes it cancerous.

  23. Anything on the grill is great, but my favorites are grilled pineapple slices. Since I married a few years back I haven't touched the grill. My honey has made it his territory. I tell him sometimes I want to do the grilling myself, but in the Texas heat I reconsider. I don't want to stand in 90 to 100 degree weather and on top of that in front of a hot grill.

By the way, thanks for checking in on me. I've been spending my limited "free time" away from blogs.

  24. Hi Happy whisk, happy cooking. It's sure fun to prepare your own meal rather than eat those take-out food. I personally love grill prawns, pineapple fish & chicken.

Glad to know you'd fun. Keep up the good job. I'd grilled jerk chicken in my blog, maybe you would like to try it next time.

    Have a nice day.
