Happy Belly

Hello Ooger Booger Butts. It's Monday and we're soon to head off to Home Depot for some paint for the bedroom. Gonna make it all nice like. But first, we'll meet up with his parents for breakfast at a Perkins. None for me, I'll just watch, but that's okay. Really, I don't mind at all. Besides, I just made sorghum and coconut flour pancakes for myself and man alive, they were good.

My belly is full. And happy.

So bring on the family time, then unplug the phone and bolt the windows, because we're going into lock down mode for the remainder of Halloween staycation.

    1. That's a good question and one I will do a longer post about down the road, but for now, I find sorghum easy to work with. It spreads easily which makes it great for pancakes, waffles and gravy/sauces. Eggs help too, along with a little coconut flour or some homemade flaxmeal.

But on the whole, it's a lovely lovely ingredient to play with. Though I haven't made any yeasted breads or quick breads with it yet. But when I do, I will write you an email and let you know how it goes.

But I digress, as for pancakes, it's one of my top choices for pancake or griddle cakes.

  3. I haven't been to a pancake house in years. I love them but they always sit like cement in my tummy then. What colors did you pick?

    1. I can understand them sitting like a brick.

We went with a blue but I cannot recall the name off hand (at Barnes now and the sample paint jar is in the car).

We're going for a Batcave style bedroom. Not with the bat signal, but a darker cave-like place to hide.

  6. Now that all the "hectic" parts of Halloween are over... we will have our own little celebration later in the week... wet, messy and chilly now....

    1. Hey Birdie. I don't know the name but it's a blue. We are going for a Batcave kinda of dark feel. Minus the Bat Signal. I think.

    2. You have to have the bat signal. That will be the best part!
