I Love ONIONS !!!!

Oh my gosh. I love onions. I should save this for a Friday question but man alive, how good are onions? Raw, cooked, caramelized, baked, boiled, roasted, grilled, I don't care. I love them any which way AND, more important to me right now, onions don't wonk-out my belly. Hot dog.

So get this. Today, I brewed a killer batch of chicken stock, then I used the stock to hydrate millet seeds (on low simmer with lid). About one part millet to nearly four parts liquid (the ratio depends on if I want a fluffy rice-like dish or a porridge, or somewhere in the middle. Then, I caramelized onions to go as a side, to the side of millet and YUM.

So flippin' good.

I think that's about all here. Dish is done, supper is prepped for tomorrow, and soon, I'll be unplugged, in The Lemon Tart Room, watching something fun. Or maybe something scary. Or maybe something fun AND scary.

Yep, that's the ticket.

  2. I like onions but I can only eat pickled or cooked onions. If I eat raw one they trigger my migraines.
    Like the nightshade veggies, if I eat them they must be cooked.

    1. I know what you mean; I can only eat them if they are battered and deep fried.

    2. Parsnip: I've never pickled them myself, but have tasted a few, but really cannot recall what they were like. They were mixed with other veggies.

      Sorry to hear that the raw triggers your migraines. Has it been that way for you all your life? Are there any nightshades that you miss eating, raw?

  3. I like onions too and I think they are good for you. Sounds like a delicious meal. I'm stuck with watching football tonight. My son's favorite team is playing.

  4. Had an uncle who didn't like onions. His wife was a good cook and we visited she made a casserole for him and another for us with onions in it. Weird, but then he was a tad odd at times.

    2. Well I guess one would have to, but I would hate to live with a picky eater. Would drive me barmy. The last time I made pickled onions, years ago, I had them in a fridge which was in our shed and they froze and the jars burst. In NC, wouldn't have thought it would get cold enough.

    3. We have family in NC, and yeah, I wouldn't have thought it was cold enough either. Wow. Although, they tell us that when NC gets even an inch of snow, they shut down everything.

    Yep, me too, I love me some onions. A killer batch of chicken stock. Sounds dangerous! :)

    Time for some red onions, methinks. They are very strong tasting onions.

  8. ahhh, onions...we eat them with just about every single thing...love them any which way. Hubs LUVS the smell of onions being fried...thinks they should come out with a room spray with the fragrance of....FRYIN' ONIONS....lol
