Blueberry Almond Coconut Crunch

What a morning. Back from running around and with a pretty good face rash at that. Not from pollen, from the food store. Right after I touched something, I got a rash on my hand and soon, my face.

I look like a hot mess.

Good thing I know how to make Blueberry Almond & Coconut Crunch, ice cream. Ah ... all better now. Well, not really but at least my purple blueberry tongue, matches my hot pink rash face.

See, always the silver lining.

    1. It's super easy:

      Organic frozen: Blueberries, apples (I keep skins on but that's not for everyone), nanners - and blitz.

      Knock back down, blitz again, adding almonds, coconut and a weeeeee bit of 100% pure maple syrup. (all cold from the fridge).

      That's it. Super yummy. Super easy.

      NOTE: I use a 500 watt food processor. It's not that strong but it does the job for one serving.

    1. I like mine eaten straight away. Though I do sometimes refreeze, they just don't have the same good texture and taste.

    1. My bad, coconut shreds, unsweetened. I sometimes roast mine first and other times I don't. But the good organic stuff, I find tastes the best.

      Though if you do add coconut milk, try it after the first knock down and maybe ditch the maple. That might work nicely.

      And no apples, no problem. The apple adds a filler without overtaking the blueberry. Pear can work instead or leave it out and see how that works.

      Most important, freeze the fruit before adding it to the food processor. And eat as soon as your done.

  8. That does look delicious. One of the best ice creams I ever tasted was at the Chinese restaurant during one of their celebrations. Right now I can't remember what it was, I will have to look it up.
