What's for Lunch?

It's lunchtime and I'm not sure what to make. Maybe a batch of homemade chicken meatballs and sauce. Although, sweet potatoes sound good, too.  Or maybe pancakes.

Yep. That's the one. Pancakes sound the best. How about you? What's for lunch, at your house?

    1. Love baked chicken. So good.

The pancake recipe is one that I wrote for the waffle maker but it might serve better for pancakes. Was gonna test, until power went out.

  5. Ooh, lunch?! Yes, it;s 1:15. must get on that. Prolly a slab of bread (or toast) with Peanut butter and about my 3rd cup of tea for the day. lol.

Pancakes always work. had that last night in fact. used up the leftover mix. Perfect food as it snowed most of the day too. Glorious with sticky syrup.

    1. Peanut butter toast is one of my hubby's favorite things to eat. So yummy.

Love pancakes for supper, lunch or anytime of day. Yum.

  6. Looks like we're on the same wave length. I made a wicked batch of savoury crepes (meaning salt, no sugar).
I then roll them up and slice them to make a kind of noodle for my homemade chicken soup.

This was something mother did when we were kids and it's a given when chicken soup is served to have crepe noodles.

Of course - I did fill one (or 3) with grape jelly (I get from a client who makes amazing jelly/jam) and had those for brekkie. Double yum - or, in this case Triple yum!

Enjoy your pancakes - I love pancakes too!

    1. Hey Jenny - Yes, I make palascintas (Hungarian pancakes which are similar to crepes). Both savoury and sweet ones. I do the same, shred them to use as a pasta or as a roll up for many many fillings.

      Good stuff.

Nothing like homemade lekvar (jam). Killer stuff and far better than anything industrial.

Glad you had a good meal. Yum.

    2. I feasted on them all day - that's how many I made… and with no one around to elbow me aside, well… I done myself proud!

  10. Very weird. I made pancakes for late breakfast, early lunch today. Then one of my sons brought pizza for dinner. Gloomy foggy out but lots of hot deliciousness inside.

  14. Today I'm making bean soup, leftover ham bone. Nothing to dangerous about that, as long as there's plenty of air freshener! :)
    Happy Monday!
