FRESH FROM THE OVEN

Here's my organic spelt flour chocolate chip cookies using coconut oil and no eggs.  The specks are from the spelt.

This is my second batch of the day, and third batch overall.  Each time I do something a little different.  For this batch I flattened the dough and used a semi-sweet chocolate.  But really, any dairy-free vegan chocolate would work, too.

So much fun.

PS: I didn't get any dog bakes done.  Just these Tim treats.

  2. The dogs would like you to turn your back on those cookies. For ten seconds. That ought to give them enough time.

    1. Thanks Linda. It's really a lot of fun and now that I can't be working in a prep kitchen, writing my own stuff gives me something fun to focus on whilst I heal up the old spine.

    1. Sure is. Just look for a chocolate without dairy (darker stuff), or use a baker's chocolate. If you go for the dairy-free chocolate, just watch for the type of sugar being used, as some use bone-char sugar - not vegan friendly.

Also, Google vegan chocolates for more options. If you have a Wegmans, Whole Foods or Trader Joe's, you're bound to find vegan chocolate there as well.

Really, so many options these days. Or, make your own with non-bone-char sugar and a dark bar or baker's bar.

      Enjoy and boogie boogie.

    3. bone-char sugar sounds scary! What is it?

    4. I don't know that you'll like this but here's the Peta page to get you started. They also list companies that don't use the bone-char process.

I'll drop this to you in a email too, just in case you don't come back to this post.

    5. OMG that is deeply disgusting! I don't eat regular sugar, only the brown one, but how can they put anything animal based in such a common product? I've only barely recovered from the fact that vanilla essence used for making industrial ice cream comes from beaver glands... now this too!

    6. Oh no, I had no idea about the vanilla essence used in industrial ice cream. I'll have to look that up.

How about the calf stomach lining for some cheeses? That one though, doesn't bother me anymore. Though it used to.

Some brown sugars here where I live are also bone-char. Same with icing sugars. I eat them now, but when I was a Major VegHead, I was sooooooooo sooooooo not into eating much of anything industrial.

    7. not to mention that many animal parts are also used in nonfood industry, not just in cosmetics, but in other fields. For example a lot of insulation materials are made from turkey or chicken feathers and bones... just horrible..... And even some medicines have animal elements. After a surgery I had the doctor wanted to treat my nonhealing scar with a gel made from little calves.... I don't even want to know how it is produced.....
