Time for Dessert

After a weekend of being exhausted, I'm recharged and ready to get to my chores.  And the sun is out, again.  I think that's three days in a row.

Meanwhile, last night Tim moved the entire living room around and this place looks fantastic.  To celebrate, I got vanilla ice cream and made homemade caramel sauce.


Formula is super easy.  I use all organic because it's yummy.

80g brown sugar (about 1/2 cup once lightly pressed)
30g good unsalted butter (2 tablespoons)
2oz. double cream (heavy cream/whipping cream)

Melt and bring to a boil for a minute or two, while whisking as it goes.  For a thicker sauce, remove from heat and let stand a few minutes. Sauce reheats nicely in microwave or over hot water.  Not sure how long it keeps, as I've never had it in the house longer than 24 hours.

  5. Lo-Mo: It is so good. I didn't let mine rest because I wanted it all melty melty, but man alive, that's good eats.

    I have a wee bit left in the fridge. Think I'll make a caramel mocha with it later.

    Flea: We usually turn our living room around twice per year. I had planned on doing it while he was out with the guys all Saturday but my body said, noppers. You gotta rest.

    I haven't been to your Doctor Who posts because I'm trying not to see what happens until we catch up with the last of the season we're on now.

  14. I definitely prefer melty caramel to overly chewy as well, I may have to attempt to make some of this sauce the next time I have icecream around that isn't "popsicle" or "drumstick" variety.

  20. mshatch: It is super duper easy. Stores well overnight in a glass container. But the caramel popcorn doesn't sit as well overnight.

  26. Todd: Funny you should ask, I was just talking about chocolate sauce with Tim. A girl at work makes her own and I want to give it a go. Will get the recipe from her next time I see her. She's the one that also gave me the doggy treat recipe. Good stuff, playing in the kitchen.
